I'm sorry we haven't talked in so long...
I'm sorry I haven't been sharing goodies with you...
I'm sorry that now even though I am talking to you and sharing goodies with you the pictures are fuzzy and the lighting is weird and this post is overdue...
The thing is this week has been a little crazy.
It is college after all.
Most of my week has consisted of two things.
First,
Crew practice.
Because I'm on the varsity team this year, and because I'm new to being a coxswain (the person who sits in the back of the boat and yells/steers) the past few weeks have been a major learning experience and involved a lot of on the water learning.
So that's me sitting in the launch watching one of our varsity eights row. Watching from the coach's boat gives you a different perspective so I know what to look for when I'm coxing the boat...
Besides being on the water, the rest of my week has been filled with...
...studying.
Oh yes, I am currently in my second year of pre-pharmacy and I'm working on applying to pharmacy school which means lots of organic chemistry, anatomy, physics, microbiology, immunology and biochemistry.
Fun, right?
So that's where I've been and I'm very sorry I haven't been talking to you.
Tonight on a study break I decided I needed a snack, and it's perfect for sharing!
My all time favorite snack food is home popped popcorn.
No, not that chemically stuff from the microwave, but real popcorn kernels popped in just a bit of oil and topped with whatever your heart desires.
This is one of the easiest snacks to make too!
Just throw popcorn and oil into a big metal bowl...
Cover with foil and put on the stove...
...and voila!
Perfectly popped popcorn ready for a plethora of delicious toppings.
Most of the time just sprinkle mine with a bit of salt and go to town...
But if you're feeling more adventurous, other topping options include-
- butter and salt
- salt and pepper
- Parmesan cheese and dried herbs
- butter and cinnamon sugar
- chili powder or other spices
I hope you can forgive me for being so busy and not cooking with you. I urge you to try this popcorn as part of my apology...I'm hoping it makes the forgiving a little easier ;)
Go have fun with it, and remember that this corn makes a perfect midnight snack.

Stove-top Popcorn
Ingredients
1/2 cup popcorn
2-3 tablespoons vegetable oil
1/2 tsp. salt (or other seasonings to taste)
Combine oil and popcorn in a large metal bowl or pot. Cover with foil and place over medium high heat. Allow to sit until popping begins. Be patient, this part takes a while. Once popping starts, give bowl a shake every few seconds to keep the kernels moving. When popping slows, remove from heat and remove foil. Top with seasonings of choice. Share, eat, repeat. :)
